Low Carb Chocolate Pie That Is PSMF Friendly!

I love dessert! But sometimes on a low carb, low fat, high protein day (a.k.a. PSMF day or “lean” day) it can feel like a drag because desserts usually mean higher fat.  This Low Carb Chocolate Pie shakes up that thought and is friendly for those leaner days without sacrificing the feeling of indulgence! It’s nice to have something that is highly satisfying but doesn’t impede your goals. I would enjoy a slice of this pie on a lean day with a couple of raspberries.  But a fat spoonful of homemade whipped cream makes this pie phenomenal on those “regular” or “higher fat” days! So. Many. Egg Whites… Lean day…

Can We Make Quick Keto Cereal?

Is there anything quite like that childhood memory of pouring a bowl of cereal and plopping down in front of the tv for some Saturday morning cartoons?  I can’t think of any.  I wasn’t ever the kid who went “coo-coo for Cocoa Puffs”, but I did love Cinnamon Toast Crunch and Apple Jacks. Dry, mind you… with a glass of milk on the side.  As I’ve gotten older, those nostalgic things have recaptured my heart. When you want a cereal crunch, there aren’t many things that will really satisfy that craving.  There are multiple brands of “Keto” cereal on the grocery store shelves, but they usually have weird ingredients and…

How About A Nut-Free Keto Flour Substitute?

A NEW KETO PROTEIN FLOUR! In the keto world it’s rare to see a substitute for all purpose flour that is a nut-free keto flour. Usually, we use almond flour, coconut flour, flax meal, and a whole variety of fiber powders to attempt to recreate baked goods that we once enjoyed before embarking on a keto way of life.  I have my own low carb baking blend that I’ve used with tremendous success over the years. It’s fantastic for converting all my old recipes into keto friendly versions. And I still use my baking blend to this day! On a seemingly unrelated note, there is a phenomenon in the keto…

    Smothered Chicken Thighs

Smothered Chicken Thighs… what are we talking about here? The memories of having a big fancy dinner ring fondly in my mind’s eye. Growing up we’d have dinner at my grandparent’s house for some reason or another and my grandma would cook up a feast. Piles of delicious home-cookin’ would fill the dinner table and so would her pretty dishes.  I couldn’t tell you for certain that smothered chicken thighs was ever on the table on those nights, but I can say I’ve had it in countless other settings. It’s one of those meals that would’ve fit beautifully at grandma’s family meals.  Loaded with rice, mushrooms, and seared chicken, it…

The Classic “Funeral Potatoes” Get A Keto Upgrade!

Why does food this good have such a depressing name?  Well… I don’t have an answer for that.  Maybe it’s because when you go to the reception after a funeral everyone wants something comforting. Perhaps this casserole was made in honor of someone’s mama after she passed and it was a hit. Or what if someone made the name up as a joke, like “these potatoes are so good I just died and went to heaven”… *shrug* Whatever the case may be, I just know when I hear “Funeral Potatoes” I think a) yum and b) definitely NOT keto friendly. *boo* Sure there are Keto Funeral Potato replacement recipes out…

Have You Had Keto Old Fashioned Fudge?

Why keto old fashioned fudge? One of the things I heard often when I’d share I follow a Keto Lifestyle was “how did you give up candies and baked goods?”  It’s a solid question for those who aren’t aware of the huge variety of ingredients at our keto fingertips.  But the longer we’re following a keto diet, the more ingredient options we’re exposed to: almond flour, coconut flour, allulose, protein powders, acacia fiber, etc.  Armed with a pantry full of alternative flours, thickeners, and sweeteners, I was able to create just about anything my little heart desired. Pre-keto, one of my favorite things to eat was candy. I especially loved Christmas candy my mom would…

    VERSATILE KETO MUFFINS

Muffins are a classic breakfast or snack option you can grab as you head out the door. Having a batch of muffins ready in the morning makes breakfast seem a little more special. They’re great for to make ahead to have all week long. And it’s easy for kids to make breakfast for themselves (mom win right there)! But the white flour and sugar makes them a big no-no on a keto friendly diet.  The high carb energy burns fast and leaves you tired, slumpy, and a little grumpy. Fortunately we can take many baked goods and convert them to keto friendly options! I played around with my baking blend…
